I looked at Dafoe's character as a nod to Van Helsing, or what a Van Helsing character might look like in that setting. He was a good foil to Aaron Taylor-Johnson's skepticism but also the counter weight to the doctor's more initial scientific approach to the situation as it unfolded.

That said, you could have had the gypsies give Thomas' character everything he needed to know about the occult nature of the situation and then have him play that role once he returned which does make Dafoe's character more redundant-- but I looked at it like a tribute and it would have felt off not to have one of the characters fill the Van Helsing role with all of the various vampire ode's to classic stories and cinema.
