Gathering is necessary for crafting. I recommend taking up 2 gathering professions if you have a new character because it's the easiest and fastest way to make gold if you dont have a higher level toon to feed you.
The Dwarf town was called Ironforge. Unfortunately the Cataclysm expansion and revamp of the original zones made cities like this and Thunder Bluff almost vacant. The only places you will see a huge number of players now is in Stormwind and Orgrimmar
