In 3, step-dodging is the most effective thing you can do for combat. Most potions don't really make up for sloppy fighting, but they do work in some cases. The Archgriffin potion is pretty helpful for taking out high level monsters (the ones where 1 hit kills you). Tawny Owl + Quen is good for group fights. For the most part, oils only really help for groups, as they only reduce the # of hits to kill by a few.
Overall, the third game is the best, but 2 does a few things a little better. The characters had more personality in 2 (except Dandelion), and the puzzles did not have obvious solutions. Also, 2 was much better at branching the story/quests, where 3 basically gives you one story with multiple cutscenes.
