I haven't had problems with stability, and to me it seems to be better now than it has ever been before.
Sticking with windows 7 doesn't make sense. In terms of support, it's a giant moneypit for Microsoft. The only reason it's still supported right now is because they have contractual obligations. However, it's not getting active development and driver/software dev for it will always be second priority. Extended support for it ends in 2020, and I would be very surprised if they moved that date back.
If you don't like windows 10, then why not try Linux or something else?
