I would have to check this, but I think Morrowind lets you kill everybody, including essential NPCs. I know it's possible to kill Vivec, for example. If you kill them, I believe the game notifies you that the "thread of prophecy" is broken or something, meaning that you've screwed up something important. But if you don't care about that, wail away.
