the difference between garlic paste and tolmou (or however its spelled) is that tolmou contains much more oil, about 150% more, and doesnt come with the citric acid kick
the addition of strong citric acid inside wet pasty garlic is a very awesome combination, really one of the best in all foods
and you add salt to this. its very simple. and it doesnt need anything else. i can imagine adding a spice such as cayenne pepper, but it really would hinder what is already going on
the citric acid is perfect when this is all done right
its a strong kick of lemon, but without the lemon flavor. because the salt and garlic are prominent enough
