Citric acid and salt alone will make nearly anything taste better. The mind cannot calculate how many crappy dishes could be saved by a mere lemon wedge. (I know you distinguish between citric acid and lemon here, but I speak generally.)
Also, soy sauce will fix anything. It's the Dawn dishwashing detergent of cooking.
