You couldnt not get footmen early, but then you just keep telling them to climb the ladders and recall them before they got to the top. This made the defenders expose themselves and also blocked the ladders.
The tactic wroked very well in defense when you could park you archers low in the cpourtyard and block the access points with the same footmen advance/recall technique
