I've played with tube mic-pres and tended to like them, but they usually had transformer front-ends. Likewise, my favorite "colorful" solid state mic-pres tended to also have transformer balanced inputs. The most scientific reasoning for the "tube sound" usually revolved around the way they clip/compress the signal vs solid state. I know there are digital modeling amps and effects that emulate tube equipment, but I'm pretty sure a good job of it could also be done completely in the analog domain. Then there's those multi-channel tube amps used mostly in metal or harder rock stuff where the distortion is generated by signal clipping by diodes rather than the tubes.

I suspect another reason why tube guitar amps tend to sound better than transistor amps is because most premium amps are tube. There are cheap tube combo amps that are pretty shitty.
