It isn't that cats aren't interested. They're trying to conserve energy. As an entirely predatory species, they store a lot of kinetic energy, both for hunting and self-defense. Expending it takes a lot out of them. This is why they seem to sit and nap so often. Otherwise, they're very interested in what's going on around them. Their lives depend on awareness. They keep a map of their world stored in memory. If something doesn't belong on the map -- an unusual noise or movement -- they go into alert mode. Otherwise, they appear to ignore things because they go back to energy conservation mode. You'll notice that the main exercise an indoor cat gets is walking around its perceived territory. It does this to update its map. Then it returns to sleep mode like a laptop or cell phone.
