Just as one does not simply walk into Mordor, so one should not simply start a fight with one of the at-large bosses. I have pointed out why above.

These enemies should be watched, followed, stalked, dogged with great patience, sometimes for several day/night cycles. You are looking for a site of advantage, some place along the boss's path where you can draw him/her away from the road and into an area with rocks, trees, and other limited natural defenses (limited because trees and rocks are predictably destroyed by boss attacks). You may find a place where you can use a horse to joust the boss -- if you can stay on the horse -- so if you plan to use this tactic, you should steal a horse from the Dunlee Farm area with good speed and turn-radius stats.

I consider horse combat too dangerous, mostly because I'm a bad rider. But I may have an advantage in my chosen site if it contains other, more hostile animals. Bears, wolves, and things far more powerful won't just attack me -- they will fight each other and other enemies who accidentally antagonize them. So it might pay to find a golem or treant in your area that you can get the boss to accidentally hit.
