You're right about the chunkiness, my favorite Doom visual mods are the ones that use more modern techniques but retain the chunky look of everything. As an example, GZDoom added support for PBR materials on map textures about a year ago, and something like this:

Where the original textures are kept and bumped materials are added to them, looks much more appealing to me than something like this:

Where new high resolution textures are used as the base for the bumped materials. (Not to mention the guy that did these went a little crazy with the metalness maps)
I guess my main beef with mods that visually up one single element of the game end up making everything else look inconsistent. So once you've upressed all the level textures, then you gotta go find upressed textures for the item and weapon sprites, otherwise everything's gonna look a little off. The guy doing these sprite to voxel conversions seems to agree, as even though the voxel enemies look a bit weird to me, they do feel like they belong quite well.
There's also mod compatibility to consider. I do wonder if the voxel enemy replacements would work with Hideous Destructor...
