Subject: my afro reeks of mesquite wood chips.

thats because i smoked the worlds greatest buffalo.

picked up some fresh pime bright red organic 21$/lb. buffalo steaks at a "whole foods" super market yesturday...

cooked on a decent sized propane grill, with the woodchips in 4 aluminal foil partitions, put off to the left side of the grill, with clay brickets ontop of the lower flame grill and the left "smoke" half on medium heat, to where the flame was about 5mm away from the foil. the right half of the grill that was designated for the meat had the brickets removed and had the flame turned off. all the heat was strickly comming from the left side. but the entire grill was pre heated for about 5mins with both sides on maximum with the lid closed. also, i would like to note, the grill had uneven flames on the left side (due to the clay brickets), so only 2 of the 4 woodchip partitions would smoke and had to be rotated from time to time in order to put a fresh batch of woodchips on the flame area.

the woodchips were soaked in a large bowl of water for about an hour, this created a blackish brown water that was then used to re soak the woodchips when they would go dry and catch on fire. also, some of the black mesquite water was used on the steaks themselfvs before cooking.

i but the steaks on a wooden cutting board by the grill, the cutting board was rubbed down with ground powdery white pepper and mesquite water. (didnt want the cutting board soaking the juices from the steaks).

the steaks were then smoked for about an hour, with frequent checkings of the woodchips. also, the steaks were flipped only once about half way through the cooking.

at the final moments, i cut the steaks to see how much they were cooked. the steaks had a greyish "im ready" tint on the insides but to my supprize the incision i made then soon pooled with blood.

finally i took the steaks out and set them asside on a plate, cranked the right half the steaks were cooking on all the up on high and flash cooked each steak indavidually on an open flame shooting through the grill. i was constantly manupulating and flipping each steak over this one tiny area. each steak had about 3-4mins of cook time on this flame. during this time, i would accidently press down on the steak during the havy manipulation i was doing upon it with my tongs and a torrent of blood and juices would pour down into the grill and creat a massive flame that would engulf the entire steak for just a second. i was carefull not to do this too much, because i wanted to keep all that juice.

the final result, when i got to cut my steak in half on a dinner plate in a lit room (it had gotten dark outside by then) was a rare, light pink steak on the inside steak with about 1mm of grey on the surfaces of it.

the inside of the steak was absolutley tender. each bite was juicy and soft. the outside was grilly and taste sort of like a grilly plain beef jerky - in taste - not in texture. the side parts of the steak with the strip of buffalo fat on it were out of this world. the fat had the most smoke flavor, and it was a light flavor where you could clearly taste the mesquite but it was not overpowering. and the smoke flavore on the actual meat itself was just barley present. almost unditectable. the fat would completely melt in your mouth in a symphony of blood from the meat, the buttery taste of the fat and the mild smokey flavor attached to the fat. the buffalo fat is VERY different from cow fat. cow fat is rubbery and shit, buffalo fat is ediable and completley turns into liquid when you chew it. not like chewing a rubber fucking ball. the buffalo blood also taste different. its not saltly like cow blood. but its not irony like mosts bloods. its sort of flavorless. but it plays an important role of totally fucking juicing up the steak and keeping it moist and tender.

everybody who ate it. i mean EVERYBODY. said it was the best meal they have had in years. i was trying to call up th4t1guy after we ate it so everybody could yell at him over the phone saying shit like "best steak EVAR" and "buffalo rocks" but he didnt pick up his phone.

too bad.
