I don't even know if I could call it fat....it's more like cartilage. And yeah, I would call the flavor slightly gamey. But, if you really like that flavor then you should try fawn. Bambi steak is insanely tender. Also, if you're out hunting and you happen to find a fawn away from it's mother, they're so incredibly stupid, you can just walk right up to it and put a bullet in the back of it's head with a pistol. You could probably cover the barrel of your gun with salt and get him to suck on it for a bit too right before you pull the trigger.
