Moon stance does help a lot with the brutes. Well, switching to the correct stance on the fly depending on who you are attacking to stagger them with heavy attacks while you dodge and parry the guys attacking from the sides is the game's entire combat loop in a nutshell. Unless it's a twinblade brute, in which case you should just cheat back with a throwable.
Don't worry too much about the whole honor/dishonor thing. While it is a core aspect of the story being told, one of the game's mistakes was making players think it would have a bearing within the game when it really is just entirely player choice.
